Well, I haven't yet lost my travelling virginity, but I suspect that these will be some staples:
> apples, oranges, dried berries/fruits, anything that doesn't squish
> nuts of all varieties
> dates, if they aren't too expensive
> couscous (it only takes hot water and pine nuts and some kind of spicy to be delicious beyond your wildest road food dreams)
> bread of some sort perhaps
> tahini! My greatest love.. not sure on the logistics of bringing it along, but I think a small jar could work in a backpack
> halvah, for those protein-crazed moments
> and when I get the chance to stop at a market somewhere, roughage of any sort, since I can't lug around a head of lettuce really - I loooove mah fiber. :3
This is a great idea thread! :D

I love local meats - though I've eaten some pretty dubious critter parts in my time.
One nice thing about pasta - it travels well, it's cheap and with just a little bit of meat (cooked well, if you're worried) you can improvise an infinite number of dinners with it.
some easy pasta toppers
olive oil, garlic, olives
tomato, oregano, garlic (garlic goes well on everything)
Any cheese
Salt, pepper and fresh veggies
Add meat to that, and you can stretch a little pasta a long way (and without meat, it keeps pretty well for picnics)
For breakfast, I like to take some nuts, dried fruit and grains and boil them in milk with cinnamon - mmmm (you can also do this with granola)
On the move - cereal, nuts and fruit really travel well and you can't go wrong.
