I'd start looking in Belize, Mexico or the Carribean (sp?)

Fiji has heaps of them but you have to be fit cause i think most of the stuff is still there since the eco-challenge i don't know if there is anything for people less fit but i would imagine so.

Perhaps Greece. Also, off the coasts of spain on the Med sea, there are some islands (can't think of the names of them - too lazy). If you're looking for something in the states, what about off Georgia? I watched this wonderful special on these islands off Georgia that have this wonderful natural habitat that is fully intact. You can camp there for a max of a week and you can kayak from the shore to there. I don't have the link as its on my laptop that's currently "under construction."

Norway is Awesome for that, you have the fjords, and then an abundance of islands around the entrance of the fjords
I believe canada is also great for sea kayaking, but i've never been myself so i cant say

If you can't get over seas... might I suggest Appalachicola in Florida?
