Default My Almendro 13 huevos rotos con hamon recipe

My recita (recipe) for huevos rotos con hamon (eggs broken with ham) for an awsome little dive in Madrid called Almendro 13. I usually serve it for breakfast, but works any time of the day.

I have a cast iron skillet well cured. I think this is the key to it all because those other types will just burn your food.

First I take about 6-8 pieces of bacon and cut them up into half in strips. Then I throw the bacon on the skillet and let them start to cook and release that precious bacon grease. I have a glass cover that I put on my skillet too.

While the bacon is cooking I grab some potatoes. I have used both russet and red, and personnally I like the red potato better, although I think Almendro uses the russet. I have also used frozen french fries in a jam and it is actually a lot faster. I slice my potatoes as thin as I can because this makes them cook faster.

If I get bored I throw in a half onion too. Mushrooms are also a nice addition and so are fresh green chiles, but you have to watch how much water you put in, i.e. onions are mostly water.

After the bacon and potatoes have cooked for 5-10 min. I season with pepper, garlic, and oregano. For those of you that like spice I also suggest a little cayanne or chili powder. I mix this all around and let cook for another 10 minutes or so. The key to knowing when you should add your eggs is when the potatoes start to get soft and begin to break up.

When I am to this point I simply crack four eggs and put them at 12, 3, 6, and 9. Once again my skillet is on really low temp. so it takes about another 10 minutes before I add a handful of cheddar cheese. You can shut off your heat here and give the skillet a few minutes to cool down while the cheese melts.

At this point I serve it like a pie in four slices. The egg sticks everything together and kind of helps make it less messy to serve.

Of course I can't recreate the ambiance of Almendro 13. That is a great restuarant and we had great company. They also had this thing that was similar to a bagel, but 3-4 times bigger and filled with cheese and ham...

I just gained a couple of pounds reading that! hahaha... Love that dish man. Carmen's dad makes an awesome one.

Sounds deeeelish, bro. Served right next to some ice cold homemade brewski.

I just met up with Flor about a week ago and since she wasn't that hungry, I didn't take her to Almendro 13. Instead, I took her to a place just off of Plaza Mayor called Meson del Champinions (Mushrooms).

Small little place with an old guy, that's been there forever, jammin on his synthesizer singing all kinds of favorites. (Think- couple at the Dresden bar in Los Angeles, shown in the movie "Swingers").
