Welcome to TravelPunk!
I don't have first hand experience with Global Crossroads, but I have known a couple of people who did one of their programs in Tibet. From what I understand, GC provides the program/job/experience and room and board and some small excursions, you have to pay for the rest. I don't know much else, but I hope this will at least get you started.
